Had a holiday with my wife and another couple in May - they made the mistake of leaving the hotel choice to me! Although not the busiest time of year, there were enough movements to keep me happy (although only a C-27 satisfied my primary interest of military).
Firstly, the hotel - we stayed atthe Corfu Holiday Palace at Kanoni - right at the end of the runway. If booking this hotel, ask for a "lake view" room on the highest floor available - I emailed the hotel direct and we were on the top floor (floor 7) in room 749 - the end room nearest the runway. There are no night flights so noise was not an issue.

1st departure each day was the Aegean flight to Athens - about 07:15 departure. This was taken from the room's balcony with EOS5D Mk.2 and 100-400L:

Of course, the wife wanted to go to the beach which also provided good views of the approach over the monastery and mouse island...

The other good photo spot for the mornings was the Royal Cafe which overlooks the approach and the threshold turning area.....

The Royal Cafe was also a nice spot for a drink in the evening (this is a Ryanair B737 on approach).....

Obviously other accommodation options are available in the Kanoni area, but the Corfu Holiday Palace half-board deal was good value, wife and friends enjoyed it and also offered up good photo opportunities.

Added a few more:

In the afternoon as the sun moves round, you can cross the breakwater at the end of the runway to the other side for photos - to illustrate, here is the breakwater with the Cafes and Hotels of Kanoni in the background...
