They quite often fly without the AEW outfit fitted, so there are plenty out there, just rarely seen fully kitted!

I beg your pardon, i was told the Mk112 version was the AEW airframes, but it appears there are Mk112's without the AEW fit in existance!

There are at least 5 Mk112's in existance:
MM81488, 81489, 81490, 81491, and 81493, of which '88 and '89 are the only ones i can find with the AEW outfit fitted at some point..

MM81493 "2-14" is a Mk410 not a Mk112

From Flight Global

"Four AEW-configured AW101s will be used by the navy as part of a 22-strong fleet of the Anglo-Italian type. Ten have been manufactured in a maritime surveillance configuration, with the other eight roled for maritime assistance tasks."

The four are
MM18488 2-09
MM18498 2-10
MM18490 2-11
MM18491 2-12

They only became operational earlier this year due to continued development work on the ISAR equipment, so some of the a/c have been flying without the full fit.
