I'd offer:

Meiringen, Orange, NAS North Island

I always fancied sitting on a beach that was a stones throw from the runway - with warmer sea than found at Leuchars!

For civilian stuff, it would be hard to beat the Sunset Bar & Grill on Maho Beach, Sint Maarten.

For me, at the moment it’d be

RAAF Townsville (mostly civil aviation, army aviation on the far side of the base) but the far end of the runway is only yards from the Pacific Ocean,

RAAF Williamtown/ Newcastle Airport (mostly military) a raised viewing area for photography, built onto Fighterworld museum, on the deck. The museum has its own fully programmed scanner. So just sit back and catch the sun. When you need cooling down go next door to the cafe for a milkshake as you photograph the aircraft departing from your picnic table.

Can't beat El Centro for spotting, the dirt track corner gives a full view of the airfield within range of all taking off and departing aircraft ;-)

Plus one for El Centro and Meiringen. Though usually the weather is at two ends of the extreme spectrum!
One day Roland will be gone, will we have a club left though?.
