Second hand is a viable way to go. I have used London Camera Exchange and mpb.com in the past.
If you do go this route check carefully the designation of the lens e.g. there are at least 2 Nikon 70-300 lenses available new.
For what it is worth I find the buffer size and speed of the D500 a significant advantage over any of the D7000 series cameras.

I’ve just started using the D500 & 200-500, switched from a 5DMK111 & 100-400.
The quality is astounding so far but I wouldn’t recommend the 200-500 for a beginner really, it was a shock to me just how much heavier it is than what I was using. If weight was an issue I would be wary of buying one, getting used to the zoom has taken me some time to adjust as well, it’s not a quick process to go from 200 to 500 & keep everything framed, for me at least. Have had to adjust how I shoot since using it. I also use a Black Rapid strap, have had one for years & much prefer them to the camera strap, especially with a long lens.
If you had concerns I’d look at the Tamron 150-600 or Sigma 100-400 which are both much lighter.
Good luck with your choice.

I've had my D500 for a couple of years - you won't be disappointed.
I use it with a Nikon AF-S 80-400 VR (later version) or AF-S 70-300 VR.
Both give good results but I prefer the smaller lens if I can get away with it, purely because it's light and easy to handle.

I’m a big fan of the 200-500. I don’t find the weight an issue at all but then I went to it from a 500 f4 so in comparison it doesn’t weigh anything at all! Used it in conjunction with a D500 last year whilst my D810 was being repaired. Some examples with the combo are in the thread below...

I've found that the biggest difference for me with the 200-500 is how much you have to turn the zoom ring to move across the range if you're trying to catch a plane coming towards you. It gets quite tiring after a while so I've started leaving it at the long end instead. I'm shooting with a 200-500 on a D610 and a 70-300 AF-S on a D7000.
OP: For a beginner, I would recommend saving your money on the D500 and buying either a grey import D7200 from HDEW or second hand model from MPB for around £600-£700. You can save yourself a lot of cash by buying second hand.
A second hand 200-500 is around £800-£900 which is still a decent saving, whereas a second hand 70-300 AF-S VR can be had for below £250 now. Practice, practice, practice and sharpen your skills first before splashing out thousands!
