telcossie -
late entry to the thread sorry, so hopefully you have worked things out for this season... However... in case you are still getting to grips with your 7D Mk2, this is what I do...

7D Mk2 with 100-400Mk2 on the front... shutter priority and auto-focus. The camera shoots 10 frames a second, so on most passes, several will be okay. This summer has seen me using the central focus point aiming towards the cockpit canopy (or similar for inverted side in loops/turns) of the target aircraft. Came back from RIAT week with 17,000 images... Lots of keepers!

There is an official Canon booklet (50 pages) which explains how to set up the autofocus and 'Cases' etc for various situations with the 7D2. Download it from here:

http://downloads.Canon.com/camera/brochures/EOS_7D_Mark_II_AF_guide_CUSA_9-2014.pdf

It's also a good idea to register on the Canon site, provide your camera details and get regular email updates. These include tutorials on things contained in the booklet and other aspects of the 7D2 / photography.
