Steve, I couldn't do prop blur to save myself. The only times I get it are sheer luck, or with an aircraft that is around for a while and I can muck around with the settings.

Why not?? Stick it on Av and use a 1/250th. Away you go.
If you are using a compact though, it must have a mode where you can select the shutter speed?
