Interpolation is a method of upscaling an image by adding additional pixels based on the state of the surrounding ones. So, in the case of the scanner, it scans at 600dpi but then upscales to 1200 by adding pixels - not the best idea for quality, but it all depends on what you want to do with the im...

Photoshop 21.1.1 has just been released and, from my quick and dirty testing, the issues that I (and others) highlighted back in February seem to have been fixed :-)
