I'd choose Dunkeswell as my venue. It's got a half decent solid runway and is in a fairly quiet area.

Flying display wise I'd want to run with two themes, firstly a celebration of aviation in Somerset and secondly, just because it's a theme I'd love Shuttleworth to run with, a celebration of Hawker.

Running with the Somerset theme displaying I'd hope to have:
RNHF Swordfish and Sea Fury.
ARCo Westland Lysander.
Westland built Spitfire/Seafire - probably AR213 is the most likely (operational Spits and Hurris were also based in the county).
Westland Whirlwind.
The Gazelle Squadron.
P-51 Mustang (used to be based at Weston Zoyland) - so hopefully the Norwegian Spitfire Foundation example.
C-47 Drag-em-Oot to represent the D-Day Troop Carrier Squadrons at Upottery.
Bristol Blenheim.
Bristol Sycamore.
Lauren Wilson's Pitts Special, and Provost G-MOOS.
Yakovlevs display team.
Vampires were briefly based at Merryfield so the Norwegian Vampire pair.
Not strictly related but Plane Sailings' Catalina could represent the US maritime patrol aircraft based at Dunkeswell.
Maybe a Merlin and Wildcat on static?
Maybe a Martin Baker Meteor on static?

For the Hawker theme:
Hurricanes - obviously! The more the merrier too.
HACs Fury and Nimrod.
Demon Displays Hawker Demon.
The RNHF Sea Fury would also fit this theme.
Maybe the Anglia Restorations Fury ISS too.
Dare I be the first display organiser to book a Hunter?!
Loafer for Mr. Da Vinci.

I would love to see a line-up like that at Dunkeswell (it's only 20 minutes away from me :) ) .... IIRC, the last time an airshow was held there would have been around 2005 (ish) - it was chilly and heavily overcast, but the participation was excellent for a low-key one-off show .... another is long overdue.

Oooh I like the idea of this thread.

I'd choose Kemble and bring back the UKAR enclosure  my theme would be tomorrow, "remember yesterday but live for today"

Flying display wise I would go for a good mix....

RAF Typhoon Solo
617sqn Tribute Trio
TFC Corsair
BBMF Trenchard Formation
Polish Mig-29
Blenheim, Spitfire and Hurricane formation display.
Red Arrows
Spanish F-18 display
French Rafale C display
Fury and Swordfish duo
A-400M demo followed by a preceded by a para-drop by an A-400 and a pair of Dakota in formation.
Belgian F-16 display
Selection of Shuttleworth WW1 aircraft, balbo display.
P-47, P-51, P-40 trio display and balbo
Cold War Warriors formation display/top side flypast - Vampire, Venom, Meteor, Hunter, Mig-15, Draken, Viggen, Tunnan
Sea King ASaC7 Display
Spanish Harrier display

I'd go for an aviation history theme. Display, to be held also at Kemble, as follows (in rough chrono order):

GWDT
Lysander
Blenheim
Bbmf Trenchard+ formation
P-51
B-17/B-29/B-1b formation flypast
B-17
Sea Fury
Meteor/Me-262/MiG-15 formation
JP x5 formation flypasts
Hunter
Swedish Historic Flight
Tornado
Lancaster / Tornado / Lightning II formation
Polish MiG-29
Italian C-27j Spartan (but from a few years ago  )
RAF Typhoon
A-400M
French Rafale
Ukranian Su-27
F-35
RAFAT

Obviously I've been slightly loose with the rules
