Worth heading over for the Hunter alone in my opinion. Do we know if it is likely to be the F.6 or the T.8, or ideally both?
In the past there were always two aircraft at the show, one of them flying, one on static only. Since the single seater was available, that one was used for the flying display mostly. At Volkel, they were operating the flying aircraft from the static.

Is this a case of just turning up? If so won’t it be absolutely heaving?

Yes, and it is usually packed to the brim. If people stacked better, I'm sure they'd try to have multiple layers of audience :)

Registration for the spottersday is open, it seems. Info about it at https://sgvolkel.nl/cms/index.php/spottersdag/spottersday-read-this-first. Closing datge is at May 9, 8 o'clock PM I guess they mean CET, as that is local (should give people from the UK an extra hour). The participants section there also mentions a German Tornado static and a Starfighter static. (That 104 seems to deserve a separate thread.)

Edited to say that the Tornado is also on the official site, quite a lot of Tiger squadrons visiting this year it seems.

Isn't the two-seater still grounded, and likely to remain that way for the foreseeable future?

Going by the operator: No. It should still be undergoing some maintenance at St. Athan, but the ban is lifted, and it has already flown since then.

Are you sure it has flown? It has been out of permit for 3 years, and my understanding is that the so-called 'small-engined' Hunters are likely to remain grounded indefinitely unless a solution to the CAA-imposed engine issues is found.

https://www.upinthesky.nl/2018/02/17/nederlandse-hawker-hunters-vliegen-weer-na-2-%C2%BD-jaar/ So, maybe it isn't at St. Athan anymore (maybe BC knows more about the current status, as he seems to live quite local, and the article is from 2018) but it says both have flown and the ban was also lifted for the two-seater.

Very easily done (I'm going the Saturday myself but staying in the area over the week), done it myself before.

Get a late Friday evening Tunnel crossing and a late Saturday evening train home, its 3 to 4 hours drive non-stop from Calais.
